Crunchy Banana Fudge Protein Bites

These Crunchy Banana Fudge Protein Bites are soft, fudgy, and dipped in rich dark chocolate with a sprinkle of crushed cashews and flaky salt for the ultimate sweet-salty crunch. The combination of creamy peanut butter, ripe banana, and PurePaleo vanilla protein makes them a nourishing snack that fuels energy, supports blood sugar balance, and satisfies cravings. Perfect for a post-workout treat, a mid-afternoon boost, or a freezer-friendly dessert you can enjoy anytime.


Ingredients

Makes 12–14 bites

1 small to medium ripe banana (about 100 g)

½ cup creamy peanut butter (120 g)

½ cup ground almonds (50 g)

½ cup gluten-free oat flour (50 g)

1 scoop PurePaleo vanilla protein powder (30 g)

⅓ cup organic raw honey (105 g)

Splash of pure vanilla extract (5 g)

Pinch of Maldon salt (1 g)

For the coating:

100 g melted dark chocolate (I use Hu Kitchen)

Crushed raw organic cashews

Flaky salt, for garnish


Method

In a medium bowl, mash the banana until smooth.

Stir in peanut butter, ground almonds, oat flour, protein powder, honey, vanilla extract, and Maldon salt. Mix until a sticky, fudgy dough forms.

Place the bowl in the freezer for 15–20 minutes to firm up the dough.

Roll into 12–14 bite-sized balls and place on a parchment-lined tray.

Dip each ball into melted dark chocolate until fully coated.

While the chocolate is still wet, sprinkle it with crushed cashews and a pinch of flaky salt.

Return to the fridge or freezer until the chocolate sets.

Store in an airtight container in the fridge for up to 1 week, or freeze for longer storage.

Pair with a matcha latte or coffee for an afternoon pick-me-up.
