Ingredients

Yields 6–8 burgers

For the Bison Patties:

2 pounds grass-fed ground bison

½ cup organic breadcrumbs or gluten-free Panko

1 large organic egg

2 tablespoons Worcestershire sauce (look for gluten-free if needed)

2 tablespoons unsweetened almond milk

1 teaspoon sea salt

1 teaspoon garlic powder

1 teaspoon onion powder

½ teaspoon black pepper

For the Garlic Aioli:

¼ cup avocado oil mayo

2-3 roasted garlic cloves, finely grated or minced

1 tsp lemon juice

Pinch of sea salt

For the Caramelized Onions:

1 large sweet onion, thinly sliced

1 tbsp avocado oil or ghee

Pinch of sea salt

Splash of balsamic vinegar 

To Serve:

lettuce wraps or grilled portobello mushroom caps 

Sliced avocado

Tomato slices

Crisp romaine or arugula

Pickled red onion

Pickles


Method

Whisk together mayo, garlic, lemon juice, and salt. Set aside or chill.

Heat oil in a skillet over medium-low. Add onions and salt. Stir occasionally for 25–30 minutes until golden. Add balsamic in the final minutes if desired.
In a large bowl, combine bison, breadcrumbs, egg, Worcestershire, almond milk, and seasonings. Mix just until combined, don’t overwork it. Form into 6–8 patties, pressing a small indent into the centre of each one.

Preheat to medium-high. Grill 5–6 minutes per side, or until internal temp reaches 160°F (71°C).

Heat avocado oil in a skillet. Sear patties 5–6 minutes per side, flipping once.

Layer each bun or lettuce wrap with aioli, greens, tomato, bison patty, caramelized onions, and avocado.


Serving Suggestions

Serve alongside roasted garlic sweet potato wedges or a lemony arugula salad.

Top with a pasture-raised fried egg or a slice of grilled pineapple for an upgrade.

For meal prep, freeze uncooked patties between parchment squares and thaw before cooking.
