Salted PB + Date Freezer Bark
Gluten-Free, Dairy-Free, Refined Sugar-Free, Protein-Packed, Gut-Loving, Hormone-Supportive
Sweet, salty, crunchy, and creamy all at once, this freezer bark is basically ice cream’s healthier sister. Coconut yogurt and protein powder create a creamy, high-protein base, swirled with rich dark chocolate and natural peanut butter. Chewy Medjool dates add a caramel-like sweetness, crushed peanuts bring the crunch, and flaky salt ties it all together. Straight from the freezer, it’s cold, refreshing, and so satisfying the perfect blood sugar–friendly snack or dessert that fuels hormones, nourishes your body, and feels totally indulgent without refined sugar or inflammatory oils.
Ingredients
500 g coconut yogurt (I used yoggu vanilla, but any clean coconut yogurt works)
1 scoop PurePaleo protein powder (vanilla or chocolate) @designsforhealth
1 dark chocolate bar (I used hu kitchen), melted
2 tbsp natural crunchy peanut butter
6 Medjool dates, chopped
2 tbsp organic crushed peanuts
Flaky sea salt ( my fav is maldon salt)
Method
In a bowl, whisk coconut yogurt and protein powder until smooth and creamy. Spread evenly onto a parchment-lined tray or dish.
Melt the chocolate gently, stir in peanut butter until silky, and swirl over the yogurt base.
Top with chopped dates, crushed peanuts, and a generous sprinkle of flaky salt.
Freeze for 2–3 hours or until set. Break into bark-style pieces and store in the freezer until ready to enjoy.
