Unreal Gemster Cookies

These cookies are soft, chewy, and full of crunchy chocolatey bites thanks to Unreal Dark Chocolate Gems. Made with almond flour, coconut oil, and almond butter, they’re naturally sweetened and balanced with healthy fats, perfect for stable energy, blood sugar balance, and satisfying that sweet craving without the crash. They’re the “healthified” version of a childhood classic, Monster Cookie vibes, but made for grown-up guts and hormone health.

Ingredients

Makes 12 cookies

2 tbsp (30g) coconut oil, softened (not melted)

½ cup (90g) coconut sugar

¼ cup (60g) natural almond butter

1 egg, room temp (or 1 flax egg: 1 tbsp ground flax + 2.5 tbsp water)

1 tsp pure vanilla extract

½ tsp baking soda

¼ tsp fine sea salt or kosher salt

2 cups (200g) blanched almond flour, sifted if lumpy

½ cup (80g) Unreal Dark Chocolate Gems, plus more for topping

Flaky sea salt, optional for topping

Method

Preheat the oven to 350°F (175°C). Line a baking sheet with parchment.

Mix coconut oil, coconut sugar, and almond butter in a bowl until smooth.

Add egg and vanilla, mixing again.

Stir in baking soda, salt, and almond flour to form a soft dough.

Fold in Unreal Gems, saving a few for topping.

Scoop 2 tbsp dough (35–40g), roll into balls, and flatten slightly on baking sheet.

Press extra Gems on top and sprinkle with flaky sea salt, if using.

Bake 10–12 minutes, until edges are golden and centres are set.

Cool for 5 minutes on a tray, then transfer to a wire rack.

Serving Suggestions

Enjoy as a lunchbox treat, afternoon snack, or dessert with a chamomile tea.
Great for hormone support and gut health thanks to magnesium-rich dark chocolate, fibre, and healthy fats.

Storage Tips:
Keep in an airtight container at room temp for 3 days, or refrigerate for up to a week. Freeze for up to 2 months.
