Perfect Soft Scrambled Eggs

Ingredients
4 large organic pasture-raised eggs (I order mine to my door - https://coligny-creek-egg-co.myshopify.com/products/organic-free-range-eggs)
1/8 teaspoon sea salt (or more to taste)
1/2 tablespoon organic grass-fed butter or extra virgin olive oil (I use https://www.graza.co/products/frizzle-squeeze)
Method
Crack the eggs into a bowl, add a pinch of salt, and whisk until well combined. Let sit for 5 to 10 minutes.
Heat a non-stick pan over medium-low heat and add the butter or olive oil.
When the butter begins to bubble, pour in the eggs and immediately use a silicone spatula to stir in small circles around the pan without stopping. Do this until the eggs thicken and small curds form, about 30 seconds.
Switch to long sweeping motions across the pan until you see larger, creamy curds, about 20 seconds.
Just before the eggs are fully set, remove them from the heat and let them sit for a few seconds to finish cooking.
Give a final gentle stir, then serve immediately with an extra pinch of Maldon salt, black pepper, and fresh herbs!
