Crunchy Thai-Inspired Chicken Salad with Creamy Peanut Ginger Dressing

This vibrant and nutrient-dense salad is packed with fresh, organic ingredients and topped with a creamy, protein-packed peanut dressing. The dressing is so insanely good that it’s actually drinkable! It adds a rich, satisfying flavour that perfectly complements the crunchy veggies and juicy rotisserie chicken. I love making my dressings from home because it gives me full control over the ingredients. I can ensure every element is healthy, nutrient-dense, and free from any unwanted additives or preservatives, giving me peace of mind while eating clean. The rotisserie chicken is a great source of lean protein, essential for muscle repair and immune function. The shredded cabbage, carrots, and cilantro help support healthy digestion and promote gut health with plenty of fibre. The vibrant red bell pepper and cabbage are loaded with antioxidants, helping to fight inflammation and protect cells from damage. The coconut shreds and peanut butter provide healthy fats that support brain health and keep you feeling satisfied. Ingredients (Serves 4)
For the Salad:

1 bunch organic cilantro, chopped

1 bunch organic green onions, finely chopped

1 organic jalapeño, seeds removed, finely chopped

1 organic red bell pepper, finely chopped

1 cup organic red cabbage, shredded

1 cup organic green cabbage, shredded

2 medium organic carrots, grated

1/3 cup organic coconut shreds

1 whole organic rotisserie chicken, shredded

For the Peanut Dressing:

¼ cup natural creamy peanut butter (60g)

¼ cup low-sodium soy sauce or coconut aminos (60g)

¼ cup rice vinegar (60g)

2 tbsp fresh lime juice (30g)

1 tbsp toasted sesame oil (14g)

1 tbsp sriracha (18g)

2 tsp honey (14g)

1 tsp freshly grated ginger (5g)

4–6 tbsp water (as needed for consistency)

Method:

In a large bowl, combine the cilantro, green onions, jalapeño, red bell pepper, red cabbage, green cabbage, grated carrots, coconut shreds, and shredded rotisserie chicken.

In a blender,  add the peanut butter, soy sauce (or coconut aminos), rice vinegar, lime juice, sesame oil, sriracha, honey, and grated ginger. Add water 1 tbsp at a time until the desired consistency is reached.

Serve the salad in a rice bowl, and drizzle the peanut dressing on top. Alternatively, serve in a wrap and DUNK your loaded wrap in the YUMMIEST peanut dressing, or use lettuce cups for a low-carb option !!

Serving Suggestions:

Enjoy with a side of coconut rice for a complete meal.
