Peanut Butter Banana Fudgy Brownies

Ingredients (Makes 9–12 squares)
1 cup coconut sugar
2 large organic eggs, room temperature
¾ cup mashed very ripe bananas
½ cup melted refined coconut oil or avocado oil
1 teaspoon pure vanilla extract
⅓ cup natural peanut butter, almond butter, cashew butter, or tahini, mixed into the batter
2–3 tablespoons additional nut or seed butter, reserved for swirling
⅔ cup One Degree Organics sprouted gluten-free oat flour
⅓ cup unsweetened cocoa powder, sifted
½ teaspoon baking powder
¼ teaspoon fine sea salt
¾ cup dairy-free dark chocolate chips
Method
Preheat the oven to 350°F (175°C) and line an 8x8-inch metal baking pan with parchment paper.
In a large bowl, beat the coconut sugar and eggs on high speed for about 1 minute, until lighter in colour and slightly thickened. This step helps create the signature crackled top.
Add the mashed banana, melted coconut oil or avocado oil, vanilla extract, and 1/3 cup nut or seed butter. Mix until smooth and fully combined.
Sift in the sprouted oat flour, cocoa powder, baking powder, and sea salt. Mix on low speed until just combined. Do not overmix.
Fold in the dairy-free dark chocolate chips using a spatula.
Pour the batter into the prepared pan and smooth the top evenly.
Gently warm the reserved nut or seed butter for about 10 seconds so it is easy to drizzle. Drop small spoonfuls over the surface of the batter and use a knife to create light swirls. Avoid over-swirling to maintain visible ribbons.
Bake for 32–38 minutes. Begin checking around 32–34 minutes. A toothpick inserted in the centre should come out with a few moist crumbs, not wet batter.
Allow the brownies to cool completely in the pan before slicing. They will continue to set and become dense and fudgy as they cool.

Enjoy as a balanced afternoon treat paired with a protein-rich meal earlier in the day, post-workout with additional protein, or slightly chilled for an even denser, more truffle-like texture.

Do not overbake. These brownies continue to firm as they cool.
