Viral Frozen Protein S’mores

Gluten-Free, Dairy-Free, High-Protein, No-Bake, Refined Sugar Reduced, Freezer Friendly

These Viral Frozen Protein S’mores are the ultimate no-bake summer treat. Creamy, chocolatey, sweet & salty, and packed with protein, they have all the nostalgic flavour of a classic s’more but the texture of an ice cream sandwich, with a healthier twist!

Made with gluten-free graham crackers, dark chocolate, fluffy coconut whip, and a boost of Designs for Health PurePaleo® Vanilla Protein, these frozen s’mores are incredibly simple to make and perfect to keep stocked in the freezer when you're craving something sweet. A little sprinkle of flaky Maldon salt is my favourite finishing touch for the perfect sweet and salty combo!

What You Need (Makes 8–10 Bars)

Frozen Protein S’mores

Gluten-free graham crackers
½ cup dark chocolate chips
2 tbsp coconut oil
1 container So Delicious CocoWhip, thawed
2 scoops Designs for Health PurePaleo® Vanilla Protein
1 tsp pure vanilla extract
Pinch of Maldon salt

Method

Add the dark chocolate chips and coconut oil to a microwave-safe bowl. Melt in 20–30 second increments, stirring between each, until completely smooth.

Line a small baking dish or glass container with parchment paper, leaving a little overhang on the sides for easy removal.

Arrange a single layer of gluten-free graham crackers along the bottom of the prepared dish.

Pour the melted chocolate over the graham crackers and spread it into an even layer. Sprinkle with a small pinch of Maldon salt and transfer to the freezer for 5–10 minutes, or until the chocolate is set.

In a large bowl, gently fold together the thawed CocoWhip, PurePaleo® Vanilla Protein, and vanilla extract until smooth, fluffy, and completely combined.

Spread the protein mixture evenly over the chilled chocolate layer, smoothing the top with a spatula.

Arrange another layer of graham crackers over the protein filling and gently press down.

Transfer to the freezer for 1–2 hours, or until completely firm.

Using the parchment paper, lift the frozen s’mores from the dish and slice into individual bars.

Enjoy straight from the freezer or allow to sit at room temperature for approximately 5 minutes before eating for the perfect creamy texture.

Notes

Make sure the CocoWhip is fully thawed before folding in the protein powder to create the smoothest, fluffiest filling.

Gently fold the protein powder into the CocoWhip rather than aggressively mixing to help maintain its light and creamy texture.

A sprinkle of flaky Maldon salt over the chocolate layer creates the perfect sweet and salty combination.

For clean slices, use a sharp knife warmed under hot water and wiped dry between each cut.

Store the frozen protein s’mores in an airtight container in the freezer for up to 2 weeks.

Allow the bars to sit at room temperature for approximately 5 minutes before eating for the best texture.
