Green Goddess Gut Lovin Salad

Gluten-Free, Dairy-Free, Gut-Supportive, High-Fibre, Anti-Inflammatory, Blood Sugar–Balanced

This is one of those salads that actually supports your digestion while still tasting fresh and satisfying. It’s crunchy, herby & coated in a creamy dressing that feels rich without any dairy! Green cabbage and celery provide fibre to support gut motility and digestion, while fresh herbs add antioxidants and support natural detox pathways. The apple brings a touch of natural sweetness along with pectin, a type of fibre that supports the gut microbiome.
The dressing is what really brings this together. Coconut kefir provides probiotics to support gut health, while avocado adds healthy fats for satiety and blood sugar balance. Garlic, shallot, and herbs layer in flavour while also supporting digestion and overall gut function.

Ingredients (Serves 4–6)

Salad Base
3 cups green cabbage, finely shredded
2 celery stalks, thinly sliced
1 green apple, finely chopped
½ cup fresh herbs, finely chopped (cilantro, parsley, dill)

Green Goddess Gut-Loving Dressing
½ cup coconut kefir
½ ripe avocado
2–3 tbsp apple cider vinegar
1 cup fresh herbs (cilantro, parsley, dill)
2 tbsp chives, chopped
1 jalapeño, seeds removed
1 tbsp lemon juice
1 tsp lemon zest
1 tbsp shallot, minced
1 garlic clove
1 tbsp olive oil
Sea salt, to taste


Method

Add all dressing ingredients to a high-speed blender and blend until smooth and creamy. Adjust acidity and salt to taste.

In a large bowl, combine shredded cabbage, celery, apple, and fresh herbs.

Pour dressing over the salad and toss until everything is well coated. Let sit for 5–10 minutes before serving to allow the flavours to come together and slightly soften the cabbage.

Notes
Best enjoyed fresh, but can be stored in the fridge for up to 24 hours.
Add grilled chicken, salmon, or steak to turn this into a more balanced, high-protein meal.
Also works well as a base for bowls or wrapped in lettuce cups.
